I’m not a morning person.
On the relatively rare occasions when I have breakfast, it’s either a hot buttered croissant—I keep a supply of croissants in the freezer—or cereal with golden raisins, raspberries or blueberries, and cream. Usually, lunch is my first meal of the day.
Today I tried something new. I boiled some baby white potatoes, then sliced them and fried them. I diced the leftover half of a Bermuda onion, and added it to the pan after the potatoes had cooked for a while. Then I shredded part of a leftover rotisserrie chicken, tossed it in as well, and seasoned it with tarragon, kosher salt, and freshly ground pepper.
It was a nearly effortless meal made almost entirely from leftovers, and it tasted great!
