Note to self: When the recipe says “Prep time: 15 minutes,” allow at least an hour for washing, slicing, dicing, chopping, measuring, stirring, and blending. Then allow another half hour for monitoring, plating, serving, packaging, and storing. Clean-up and waste disposal don’t count—you’ll be too tired to do them tonight, so they’ll have to wait until tomorrow.
Note to self: When the recipe calls for more than 30 minutes of prep time, forget it and send out for Thai.
I found this recipe for Chicken with Lime, Garlic, and Cilantro on a charming little web site called Nerds with Knives, which is the home of ex-Brooklynites Matt and Emily Clifton. In “real” life, Matt “muck(s) around with computers” and Emily is a film/TV editor. She’s also a first-rate photographer, as you can tell from the site.

As for the dish itself, I think it came out v well. For me, thighs have always been the least interesting part of the chicken, but the sauce in this recipe was quite good, and made it work. The side was Jasmine rice with garlic and basil.
