I doubt anyone remembers my first blog posting of the year, in which I posted a picture of my home-made Spicy Sausage Soup with Cannellini Beans, and optimistically announced my resolution to develop a 2016 Cookery Project. Well, about that New Year’s resolution….
Actually, I’ve been doing some good stuff. I just haven’t been documenting it here.
This, f’rinstance, is the Cajun Shrimp casserole I made yesterday.
It made with tomatoes, jalapeno, sweet onion, brown rice, and quinoa. Oh, and shrimp, with melted fontina cheese on top.
It tasted as good as it looks.
